Feta Cheese Pasta Bake

Ingredients

1 block of feta cheese
1 bunch of fresh cherry tomatoes (or 1 can of cherry tomatoes)
1/4 cup of olive oil
4 cloves of garlic (minced)
255g of pasta (we recommend penne or fusilli, but any pasta will work)
Fresh basil and chopped red chillies, for garnish
Salt and pepper (to taste)

Directions

1.

To start, preheat your oven to 205°C (400°F).

Place your block of feta cheese in the centre of a baking dish. Surround the feta with the cherry tomatoes.

In a small bowl, whisk together the olive oil and minced garlic. Drizzle this mixture over the feta cheese and tomatoes. Season everything with salt and pepper to taste.

Bake the feta and tomatoes in the preheated oven for about 30 minutes, or until the cheese is golden and the tomatoes have burst.

While the feta and tomatoes are baking, cook your pasta according to package instructions. Once the pasta is done, reserve about 1 cup of the pasta water before draining.

Once the feta and tomatoes are done baking, use a fork to mash the feta and tomatoes together until it forms a creamy sauce.

Add the cooked pasta to the baking dish with the feta and tomatoes and toss everything together. If the sauce is too thick, add some of the reserved pasta water to thin it out.

Serve the baked feta pasta hot, garnished with fresh basil and chopped chillies.

Notes

Here are some ways you can adapt this recipe. If you eat it as often as I do, you end up finding lots of different variations that work.
* Swap out the cherry tomatoes for another type of tomato, such as diced Roma tomatoes or sun-dried tomatoes.
* Add some chopped spinach or kale to the dish for some extra nutrition.
* Use a different type of cheese, such as goat cheese or ricotta, instead of feta.
