1 cup quinoa, rinsed
2 cups water
1 can chickpeas, drained and rinsed
1 cucumber, diced
1 red bell pepper, diced
1/2 red onion, diced
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup olive oil
2 tablespoons lemon juice
Salt and pepper, to taste

Directions

1.

In a medium saucepan, combine quinoa and water

Bring to a boil, then reduce heat to low and simmer for 10-15 minutes, or until the quinoa is cooked and the water is absorbed.

Remove the quinoa from the heat, place a lid on top and leave to rest for 5 mins, then fluff the quinoa with a fork to break the granules apart.

In a large bowl, combine the cooked quinoa, chickpeas, cucumber, red bell pepper, red onion, parsley, and mint.
