In a small bowl, mix together all the spices until well combined. 

  • 2 teaspoons chili powder 
  • 1 teaspoon ground cumin 
  • 1 teaspoon smoked paprika 
  • 1/2 teaspoon garlic powder 
  • 1/2 teaspoon onion powder 
  • 1/4 teaspoon dried oregano 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon black pepper

450g boneless, skinless chicken breasts, sliced
3 bell peppers (ideally red, yellow, and green), sliced
1 onion, sliced
3 tablespoons olive oil
Salt and pepper, to taste
2 tablespoons fajita seasoning (see below)
Tortillas, for serving
Optional toppings: shredded cheese, sour cream, guacamole, diced tomatoes, salsa

Directions

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminium foil.
