Three Easy 15-Minutes Meals 

Welcome to my recipe blog! In today’s post, I’ll be sharing with you three delicious and easy 15-minute meals that are perfect for those busy weeknights when you don’t have a lot of time to spend in the kitchen. 

I know first-hand how challenging it can be to find the time and energy to cook a healthy meal after a long day at work or school. That’s why I created this blog to share my favourite recipes that are quick, easy, and delicious. In this post, I’ve curated three of my favourite 15-minute meals that you can make with just a few simple ingredients. These recipes are perfect for those nights when you want to get dinner on the table quickly without sacrificing taste or nutrition. Whether you’re a busy professional, a student, or a parent with a hectic schedule, these meals are sure to become a go-to in your recipe arsenal. 

From creamy garlic prawn pasta to black bean quesadillas, each of these meals is packed with fresh ingredients, bold flavours, and plenty of nutrients. And the best part? You can whip them up in just 15 minutes or less! black bean quesadillas

Black Bean Quesadillas 

Ingredients: 

  •  4 large flour tortillas 
  •  1 can black beans, drained and rinsed 
  •  1/2 cup shredded cheddar cheese 
  •  1/2 cup salsa 
  •  2 tbsp chopped fresh cilantro 
  • Salt and pepper to taste  
  • Sour cream (optional)  

Method: 

  1. Heat a large skillet over medium heat.  
  2.  Lay one tortilla in the skillet and sprinkle with half of the black beans and half of the cheese. 
  3.  Spoon half of the salsa over the top and sprinkle with some chopped cilantro. 
  4. Season with salt and pepper to taste.  
  5.  Top with another tortilla and press down lightly. 
  6.  Cook for about 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden brown. 
  7.  Repeat with the remaining ingredients to make another quesadilla. 
  8. Slice the quesadillas into wedges and serve with sour cream, if desired.  
     
Caprese Salad with Balsamic Glaze

Caprese Salad with Balsamic Glaze 

Ingredients: 

  • 1 large tomato, sliced  
  •  100g fresh mozzarella cheese, sliced 
  • 1/4 cup fresh basil leaves  
  •  1 tbsp olive oil 
  • 1 tbsp balsamic glaze  
  • Salt and pepper (to taste)  

Method: 

  1. Arrange the tomato slices and mozzarella cheese slices on a plate.  
  2.  Scatter the fresh basil leaves over the top. 
  3. Drizzle the olive oil over the salad and season with salt and pepper.  
  4. Drizzle the balsamic glaze over the top.  
  5.  Serve immediately
     
Creamy Garlic and Prawn Pasta

Creamy Garlic and Prawn Pasta 

Ingredients: 

  • 200g spaghetti  
  • 1 tbsp olive oil  
  •  200g prawns, peeled and deveined 
  •  4 cloves garlic, minced 
  •  1/2 cup heavy cream 
  • Salt and pepper to taste  
  • Fresh parsley, chopped (optional)  

Method: 

  1. Cook the spaghetti according to package directions.  
  2.  While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. 
  3.  Add the prawns and garlic to the skillet and cook for about 3-4 minutes, or until the shrimp is pink. 
  4.  Stir in the heavy cream and cook for another 2-3 minutes. 
  5.  Drain the spaghetti and add it to the skillet. Toss everything together. 
  6.  Season with salt and pepper to taste. 
  7.  Top with chopped fresh parsley, if desired.
